Banana and Cocoa Nib

- 1 Large loaf
- 5 minutes
- 3 hours
Ingredients
- 200 ml tepid water
- 1 egg
- 2 tbsp. skimmed milk powder
- 3 tbsp. sugar
- 2 tbsp. butter
- 2 tsp. salt
- 2 medium, mashed
- 600 g. strong white flour
- 2 tsp. yeast
Fruit & Nut Dispenser
- 70 g cocoa nibs
Directions
- Place ingredients in loaf pan in order listed and the cocoa nibs into the fruit and nut dispenser compartment.
- Set programme to “sweet” with loaf size of 1 kg.
By hand
- Knead until you have a smooth dough - about 15 min
- Add the cocoa nibs and knead for a couple more minutes until well distributed
- Leave to rise until doubled in size.
- Knock back and shape the dough.
- Place in large, floured loaf tin to rise again until the dough is a centimetre or so above the rim.
- Pop in pre-heated oven at 170°C for 40 min
It’s banana bread… not cake 😛
Notes
For a better flavour, use the most over ripe bananas you can get.
Swap out the cocoa nibs for sultanas, or a mix of both.
If the bread machine doesn’t have a dispenser let it run for 10 min or so, then add the cocoa nibs.
