Oak Smoked Sourdough

Ingredients

  • 200 g active starter
  • 400 g strong white flour
  • 200 ml water
  • 5g salt
  • Oak smoking chips

Directions

Still working on this but basically it involves using a PolyScience® Smoking Gun to smoke the flour before making the dough.

Early experiments have been well received!

Smoking Gun

  • First attempt under cloche was ok but could be more smoke flavour.
  • Mesquite smoke worked well too - a slightly more intense flavour.

Smoking The Flour

  • This way worked a little better as more surface area of flour is exposed to the smoke. Repeated 3 or 4 times stirring the flour in between.
