Oak Smoked Sourdough

- 1 loaf
- 1 hour
- 40 minutes
Ingredients
- 200 g active starter
- 400 g strong white flour
- 200 ml water
- 5g salt
- Oak smoking chips

Still working on this but basically it involves using a PolyScience® Smoking Gun to smoke the flour before making the dough.

Early experiments have been well received!
- First attempt under cloche was ok but could be more smoke flavour.
- Mesquite smoke worked well too - a slightly more intense flavour.
- This way worked a little better as more surface area of flour is exposed to the smoke. Repeated 3 or 4 times stirring the flour in between.
