Simple Vanilla Fudge

Mmmmm… Fudge…

Ingredients

  • 300 ml double cream
  • 100 ml semi-skimmed milk
  • 100 g butter
  • 300 g caster sugar
  • 150 g soft brown sugar
  • 1 tsp. vanilla extract

Directions

  1. Place all ingredients in large, heavy bottomed saucepan and bring to boil over medium heat, stirring regularly.
  2. Increase heat, stir continuously until mixture reaches 116°C (soft ball)
  3. Remove from heat and allow to cool to 110°C
  4. Add vanilla and beat until the fudge looses its shine.
  5. Pour into greased tin (approx 20 cm x 20 cm) and leave to cool completely.
  6. Cut into chunks and store in fridge
