Simple Vanilla Fudge

Ingredients
- 300 ml double cream
- 100 ml semi-skimmed milk
- 100 g butter
- 300 g caster sugar
- 150 g soft brown sugar
- 1 tsp. vanilla extract
Directions
- Place all ingredients in large, heavy bottomed saucepan and bring to boil over medium heat, stirring regularly.
- Increase heat, stir continuously until mixture reaches 116°C (soft ball)
- Remove from heat and allow to cool to 110°C
- Add vanilla and beat until the fudge looses its shine.
- Pour into greased tin (approx 20 cm x 20 cm) and leave to cool completely.
- Cut into chunks and store in fridge
